“Oatmeal” Raisin Cookies

My dh’s favorite cookie pre-celiac was oatmeal raisin from Tim Horton’s. Dream Jello “salad”

I just love that these jello moulds are called salad – it is a perfect accompaniment to the burgers and hot dogs that will be barbecued soon. Of course we all know that it IS dessert.
Ingredients:

2 pkg raspberry jello (the small 4oz ones)
2 cups hot water
1 cup cold water
1 can strawberry [...]

Low-fat, Low-point, gluten-free snacks

Hubs is just down-right ticking me off with all his weight loss.  He’s winning hands-down.  And don’t even try to tell me that it isn’t a competition.  If it is something we are both doing, then obviously its a competition.
Oh.
That’s not obvious?  Anyway, here’s my observations from raiding his gluten-free snack cupboard:

Shrimp Surprise Spread

2 cans, broken cocktail shrimp, drained
8 oz (1 brick) cream cheese
1/2 cup mayonnaise
1 small jar seafood sauce
1/2 green pepper, chopped
1/2 red pepper, chopped
1/2 tomato, chopped
1 1/2 mozzarella, shredded
2 scallions, chopped

Prepare: mix together cream cheese & mayo;
Layer in 9 x 13″ baking pan: cream cheese mix, seafood sauce, shrimp, chopped veggies, top with mozzarella
